I’ve officially jumped on the quarantine baking bandwagon – it was only a matter of time, right? As much as I love cooking though, baking is not my expertise. I’ve never been a fan of measuring when I cook, and baking is all about exact measurements. It almost feels like a science, which was never my favorite subject in school 😉 Well I’m starting with baby steps here, and this recipe is SUPER easy! If I can do it, anyone can. With only 4 ingredients, these cookies turned out deliciously soft and fluffy – my husband nearly finished this entire plate in one sitting!
Ingredients:
- 1 cup creamy peanutbutter
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 large egg
Directions:
- Combine all ingredients & mix until dough is formed
- Roll dough into 2 inch balls and place on greased baking sheet (I would have lined with parchment paper but I was out, so I used tin foil)
- Use a fork to press a criss cross pattern on top
- Bake at 375 for 10 mins
- Enjoy!
